I have made this chili a ton of times. It's so flexible so if you don't have exactly the below ingredients, you can switch to something you do have. I made this last Spring when we had a cold front come through. I really do love chili and as Fall is upon us, I'm excited thinking about all those things I love fall, including chili!
Here we go, let's get cooking!
Ingredients:
1 1/2 lbs ground meat: I usually use 1 lb of ground beef and 1 lb of ground turkey. You could also use ground chicken, or even shredded chicken.
1 large chopped onion (yellow or white)
4 cloves minced garlic: sometimes I don't even put this in (sorry if I offend you garlic lovers)
2 Tbsp chili powder
1/2 tsp salt
2 tsp cumin
1 tsp dried oregano
1/4 tsp cayenne
2 (15 oz) can kidney beans (I like to use 1 can black beans and 1 can kidney beans)
1 (28oz) can diced tomatoes (sometimes I just use crushed tomatoes)
1 (6oz) can tomato paste
1 cup dark beer (you can just use water and season more if you don't have beer)
Optional: 1 4 oz can diced jalopenos (if you want some extra heat)
Serve with:
Shredded cheese and sour cream
Instructions:
Brown meat and drain if using fatty meat. Add the onion and cook until translucent.
2. Mix all seasonings together.
3. Add seasonings to meat and stir.
4. Add tomatoes and beans and stir.
5. Add the beer and optional jalopenos and allow to simmer for 30 minutes.
6. Once done, taste and adjust seasonings as desired.
7. Serve with shredded cheese and sour cream.
ENJOY!! So delicious! You could add a dash of vinegar, and also serve with pickle spears, saltine crackers or homemade cornbread!
