I LOVE salad, really just about any way you make it! Spring mix, spinach salad, or a good ole caesar salad with crunch romaine. When I'm in a big hurry, I love to put together a simple caesar salad. I love caesar dressing, but I don't like trying to make it from scratch with eggs. So, I make this eggless recipe that tastes pretty darn close to a real caesar dressing. Let's get to it!
Ingredients:
Romaine lettuce (I like to buy this in 3 hearts in a bag these days and my family will eat one entire heart if not two at one meal).
Caesar Dressing:
1/4 - 1/2 cup mayonnaise (we love the Olive oil mayo). I would start with 1/4 and then add if you desire when tasting.
1 tsp lemon juice
1 tsp Worchester sauce
1 tsp dijon mustard
Garlic powder or salt to taste (just remember a tiny bit of garlic salt goes a LONG way).
Ground black pepper (to taste)
Parmesan cheese (I simply use the shredded kind in a plastic tub)
Instructions:
- Mix all ingredients together and taste. Adjust if needed.
- Chop romaine heart. Add dressing and toss. Sometimes I owe a shredded carrot to get some extra vegetable.
