I love gyros, but I don't make a point to have lamb in the freezer. So, I make them with chicken and they are just delicious! The best part is that they are also SOOOO easy and as a busy working mom, easy and quick are two requirements for most of the meals I make in this house!
Sometimes I can find chicken tenders at the store on sale, which is just like JACKPOT! But if I can't, it only takes a few extra minutes to take chicken breasts and cut them into tender sized pieces.
Let's get cooking!
Ingredients:
2 lb chicken tenderloins
Olive oil for pan
For the marinade:
1 cup greek yogurt
Juice of 1 lemon
2 Tbsp olive oil
3 garlic cloves, minced
Salt and Pepper to taste
1 Tbsp oregano
1 tsp sweet paprika
1 tsp ground cumin
1 tsp ground coriander
Fixings (all optional, do what you want!):
Pita pockets
Lettuce
Tomato
Red onion
Feta cheese
Kalamata olives
Homemade tztaziki sauce (see recipe here)
Directions:
Add all marinade ingredients into large dish.
Add chicken tenderloins and mix well. If you have time, allow to marinate for at least 30 minutes (or overnight).
Heat olive oil in large frying pan (I use a non-stick pan).
Another option is to put them on a baking sheet with parchment paper (makes for easier cleanup) and bake in the oven until cooked through (approx. 20 min).
Grill chicken pieces until cooked through (about 4 or 5 minutes each side).
When all chicken is done, serve with all the fixings!
My favorite way to build is to toast the pita a bit in my toaster oven, then spread some tztaziki sauce inside, put the chicken pieces in, top with feta cheese, cucumber, lettuce and even more sauce if needed.
