Chocolate Cupcakes (no eggs, no butter!)

If you have read any of my recipes, you know that I LOVE to bake and I LOVE anything made with cinnamon. Well, the other thing I love is CHOCOLATE! I love Dark Chocolate, and so my favorite cake is chocolate cake. This recipe is for chocolate cupcakes. I have made it into a cake before, but recently when I’ve made chocolate cake it was for someone’s birthday so I did not try to make it healthier!


This recipe uses whole wheat flour, applesauce instead of butter, and doesn’t use any eggs at all. It’s super easy and quick to whip up and make into cupcakes. I usually make a quick buttercream frosting and can have these done in no time! Let’s get started!


Ingredients:

1 ½ cup flour (I use 1 cup all-purpose and ½ cup whole wheat)

3 Tbsp cocoa (unsweetened)

1 cup sugar (you can easily get away with using only ½ or ¾ cup and they still taste great)

1 tsp baking soda

½ tsp salt

1 tsp white vinegar

1 tsp vanilla extract

5 Tbsp vegetable oil (this is where I use 3 Tbsp applesauce and 2 Tbsp oil, but you can use all oil)

1 cup water

Buttercream frosting (my favorite is chocolate, recipe HERE


Instructions:

- Preheat oven to 350oF.

- Line a muffin tin with cupcake liners.

**You can also choose to just spray with oil spray if you want to save the paper. But, if we are making them for someone else, or for company I always use liners so I’m not touching their cupcakes!

- In a large bowl, mix all of the dry ingredients together.



- Next, mix the wet ingredients together.


- Add the wet to the dry and mix until smooth.


- Fill each cupcake liner ¾ full.

- Bake 15 to 20 minutes or until a toothpick comes out clean. (see note)

*Note: When checking at the 15 min mark, get a clean toothpick and poke in the center of the biggest cupcake. If the toothpick comes out clean, the cupcakes are done. If not, cook at 1 or 2 minute increments until the toothpick comes out clean.


- Remove from oven and allow to cool in tin for a couple of minutes. Then, remove and cool completely.

- Once cook, sprinkle with powdered sugar or frosting.
