Cinnamon Roll Muffins

Do you love cinnamon rolls as much as I do? Basically anything with cinnamon makes me happy! The other day, I was in a hurry to make something for breakfast and was craving a cinnamon roll. While I have a quick recipe here I still didn't have that much time before taking the kids to school. So, I thought "why can't I make a cinnamon roll muffin?" So I took my basic blueberry muffin recipe, altered it, and also basically made it up as I went along! So, here goes.

Ingredients:

2 1/2 cups flour (I like to mix all purpose and whole wheat flours)

1 cup brown sugar

3/4 tsp salt

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon

1/3 cup vegetable oil (to lessen the fat, you can substitute apple sauce for the oil)

1 1/2 cup buttermilk (if you don't have in the fridge, just mix 1 Tbsp lemon juice or vinegar with the milk and allow to sit for a few minutes and voila! you have buttermilk)


2 Tbsp butter and 3 Tbsp brown sugar


Glaze

1 Tbsp of milk

1/2-1 cup of powdered sugar (depending on how thick or runny you want it)


Instructions

- Preheat oven to 400F and prepare muffin tins.

- Mix dry ingredients together.

- Mix oil/applesauce and milk together and stir into dry ingredients.





OK this is where I started to "wing it" and make it up. I thought, how do I make cinnamon rolls? I made a dough, roll it out and then rub butter and then sugar/cinnamon. So, I melted a couple Tbsp of butter, added some brown sugar. I put 1/2 of the batter into the muffin tins, then I poured a bit of the butter/sugar mixture and then more batter on top.


- Bake for 18 minutes until a toothpick comes out clean when you poke the middle of one of the muffins.

- After they cooled for a bit, I added a bit of a glaze!! It wouldn't be a cinnamon roll muffin without some icing!
