Ok, before you roll your eyes and dismiss this recipe, bear with me!
I love to take my favorite foods and "health them up" by substituting various ingredients for a healthier option.
I LOVE cinnamon rolls, I mean LOVE!! But the thought of having to wake up at 4am to start the dough and have so many steps during the process can be daunting.
Most bread recipes have a "no yeast" option that uses other ingredients to cause the batter to puff up in the oven. It won't taste exactly the same, but gets the craving under control (in my opinion)!
I have experimented with so many different Cinnamon roll recipes and the one I go to the most is below. I have made these too many times to count. So, let's get to it!
This will yield 8 small or the pictures below are 6 larger in my big muffin tin.
Ingredients:
1 cup Whole Wheat Flour
1/2 cup All Purpose Flour
4 Tbsp granulated sugar, divided use
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
10 Tbsp milk
2 tsp apple cider vinegar
4 Tbsp applesauce
3 Tbsp butter, melted
3-5 Tbsp brown sugar (I usually use only 3 or 4, but you could use up to 6)
2 tsp cinnamon
For the glaze: there's two options here; cream cheese frosting, or simple glaze! Now, I don't want to start an argument but I am partial to the simple glaze. My husband really loves the cream cheese frosting. So, do what you prefer!
3 oz softened cream cheese
1/3 cup powdered sugar
splash of milk until desired consistency
Simple glaze: Just mix powdered sugar and milk until you get the consistency you want. I typically add a Tablespoon of milk to a mixing cup and then add sugar until it's a thicker glaze.
Instructions:
1. Preheat oven to 375oF.
2. Prepare choice of muffin tin with spray. This recipe will make 8 regular rolls or if you have a large, 6 muffin tin, you can make 6 larger ones.
3. Mix flours, 2 Tbsp of the sugar, baking powder, baking soda, and salt. In a separate bowl, mix the applesauce, apple cider vinegar and milk. Add the wet ingredients to the dry ingredients until just combined.
4. Add flour to your counter and knead just a few times until it's a soft dough.
5. Roll out into a rectangle about 12-18 inches. You want it to be pretty thin and do your best to roll into a rectangle.
6. Melt the 3 Tbsp of butter and spread onto the dough.
7. Mix the brown sugar and remaining 2 Tbsp sugar and cinnamon.
8. Sprinkle on top of the butter.
9. Next you have two options again!
One, roll up and slice. This is the easiest if you are going to make 8 in a regular muffin tin.
Two, slice small strips (see my marks below) and roll up and then stack on a second strip and roll again.
10. Put in prepared muffin tin.
Bake for 14-15 minutes until golden brown.
Allow to cool slightly and then drizzle your frosting all over and enjoy with a BIG, HOT beverage!
