Just a simple dinner for 6! - Baked Chicken and Potatoes

So the other night I had NO clue what to make for dinner. Typically, I have a plan for each night of the week (see other posts for details). But since last March 2020, many "plans" have been thrown out the window. I go to the grocery store way less often so sometimes it's like an episode of "Chopped" and I have to figure out what in the world to make!


So, I decided I would make some sort of chicken, potatoes and just simple veggies. Well, if you've ever googled "Chicken breast recipes," you'll see that it's ridiculous how many there are. But, I found a recipe where you sliced the chicken into tenders and added soy sauce, olive oil, a little siracha sauce and then just grill! That sounded easy enough.


So, I took my chicken breasts and sliced them into tender-sized pieces. I mixed the marinade ingredients in with the chicken and let that sit.




Next, I started on potatoes. I LOVE potatoes, like LOVE them! I will eat them however you want to serve them to me!! Fried, baked, mashed, scalloped, etc. **Side story: I went to Ireland with my mom when I was in high school and one of my fondest memories was the restaurants! They offered 3 sides with your main dish and they were all just varieties of potatoes! I was in heaven! **


OK so back to my potatoes. I simply washed some baking potatoes, cut them into smaller cubes and tossed them with olive oil, paprika, season salt, pepper and some garlic powder. You can really toss them in whatever seasonings you prefer.

Then, I put these on a baking sheet and put in the oven at 400F.





While the potatoes cooked, I went back to the chicken. I heated some sesame oil in a non-stick frying pan over medium-high heat. Once hot, I started adding the chicken and cooking on both sides until golden brown (about 4-5 minutes each side). Then, I removed them from the pan. At this time, the hubby came around the corner and said "something smells good!" I said, "I hope it tastes good!" He asked if I was going to make a sauce and I hadn't thought that far! So, he took the pan that had some burned bits from the marinade and added some mirin, seasoning sauce, brown sugar and more soy sauce. Then, we added a corn starch/water mixture until it thickened. We threw the chicken back in and tossed until the tenders were all coated.


For the veggies, I just love to have frozen bags of vegetables in the freezer. We just add a mix of whatever we're in the mood for and heat in the microwave. It's that easy! Put a little butter and seasonings on them and you're set.


It all turned out delicious! The kids said "mom make this every time!" So, when they say that they will at least eat it one or two more times before they claim they never liked it!


So, next time you have no idea what to cook, just get inventive with whatever sauces you have in the house until it tastes good! You can do this!
