It's Fall, it's almost Thanksgiving and it's been gorgeous outside! Personally, Fall is one of my favorite seasons. I love the air getting cooler, the humidity getting lower, the leaves changing color, and especially Thanksgiving!
Some people are crazy for pumpkin. Pumpkin spice drinks, pumpkin coffee creamer, pumpkin decorations, pumpkin seeds, and of course pumpkin pie at Thanksgiving!
My family isn't big on pumpkin. We love to get pumpkins to carve and we love to roast the seeds, but they really don't care about eating pumpkin-flavored things. Until I made these cookies! I make them every year for our church Women's retreat. They are always a HUGE hit and even my family loves them! They are perfect for Fall and they are really easy to make. I think it's the caramel frosting that seals the deal for us! The cookie tastes good by itself, but once you put on that caramel frosting, it's life altering! :)
Let's get baking!
Ingredients for Cookies:
1 cup salted butter, softened (I often use 1/2 cup applesauce to cut down on the fat content.)
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1 cup pumpkin puree (when you buy a can at the store, that's enough for 2 cups, just FYI!)
2 cups all-purpose flour (I like to do 1 cup white flour, 1 cup whole wheat flour).
1 tsp baking soda
1 Tbsp cinnamon
1 tsp pumpkin pie spice (I rarely remember to have this, so don't add and they are still great!).
1/4 tsp salt
Caramel Frosting:
3 Tbsp salted butter
1/4 cup heavy cream
1/2 cup brown sugar
1 tsp vanilla
1 cup powdered sugar
Instructions:
- Preheat oven to 350F. Grease two baking sheets or use parchment paper.
- In a large bowl or mixer, cream together butter (applesauce) and sugars until mixed together. Add the egg and mix.
- Beat in pumpkin, flour, baking soda, cinnamon, pumpkin pie spice and salt. Beat until combined.
- Drop by Tablespoons onto prepared cookie sheets. Bake for 10 to 12 minutes. Remove from oven and let cool completely before frosting.
Frosting:
- Heat butter, heavy cream and brown sugar in a small saucepan over medium heat. Stir until mixture comes to a rolling boil. Remove from heat and let cool. Add powdered sugar and vanilla. Frost each cookie and EAT!
