Texas Ranger Cookies.... just typing that makes my mouth water! My Grandmother used to make these all the time during my childhood. My Aunt and Uncle would be heading west to Colorado and they would stop by her house (in Northwestern Kansas) on the way. She would always give them an old Folgers tin full of these cookies! It was everything they could do to save some for the backpacking trip rather than eat them all in the car while driving!
I have made these so many times, I almost have the recipe memorized. Every time I make these, people rave and ask me for the recipe. Over the years, I have experimented with making them healthier. So, below I will explain some ways you can modify the original recipe in case you want to try the healthier recipe.
Ingredients:
1 cup butter, softened (Grandma always used 1/2 butter and 1/2 shortening)
1 cup brown sugar
1 cup sugar
2 eggs, room temperature (I often forget to get them out early so use right from the fridge)
1 3/4 tsp vanilla (if you don't have, it's ok)
2 cups all-purpose flour
2 1/2 Tbsp all-purpose flour
1/4 tsp salt
1 1/2 tsp baking soda
1/4 tsp baking powder
1 3/4 cup rolled oats
1 3/4 cup corn flake cereal
1/2 cup flaked coconut (If you're not a fan, you don't have to add coconut)
Directions:
- Preheat oven to 325oF. Prepare a baking sheet with parchment paper.
- Start by adding softened butter and sugars to your mixer and cream together.
- Next add the eggs and vanilla and mix until combined.
- Next, add the flour, salt, baking soda, and baking powder and mix until combined.
- Add the oats, corn flakes and coconut (if using). Mix until combined.
- Put heaping Tbsp size onto the tray. Bake at 325oF for 10-12 minutes. They will look as if they are not done, but leave them on the tray for a few minutes and they will be perfection!
Now, the final step is to EAT ONE!!
