Whole Wheat Banana Bread


I LOVE baked goods, if you know anything about me and you pay attention to my posts, they are mostly baked goods! Banana bread is one of my favorites because it is so easy to make and doesn't require kneading like a typical bread. Also, it uses up those overly ripe bananas that no one wants to eat!


I love making this either in a bread pan, or even into muffins.


Let's get started!

Ingredients:

2 cups flour (I use 1 cup white flour and 1 cup whole wheat flour, but you could use all white flour)

1 tsp baking soda

1/4 tsp salt

1/2 cup butter (softened)

3/4 cup brown sugar

2 eggs, beaten

2 1/3 cup mashed overripe bananas


Instructions:

Heat oven to 350oF.

Grease 9x5 bread loaf pan

Combine flour, baking soda and salt in a small bowl.

In a large bowl, cream together butter and brown sugar. Stir in eggs and bananas and mix until well combined.



Add the banana mixture into the flour mixture. Stir just to moisten. Pour the batter into a loaf pan. Bake for 60-65 minutes.



*Note: If you really want to be crazy, stir in some chocolate chips before putting in the pan. Or, you could make a sugar, cinnamon, butter crumble to put on top. The picture at the start of this has the crumble.
